One year ago today I wrote my first post because of this blog. WHILE I started I really never believed anyone would go through it. It's an escape from the day to day time above all else (sometimes I even compose my articles while at work when I need to clear my head; sshh, don't inform anyone!)
My original plan was to remake the Amaretto Mozzarella cheese Tart I wrote about in my first post. An unexpected condo visit on Sunday transformed my plans. Instead I'm posting these Banana Nutella Muffins along with you. They appear appropriate since muffins are probably the baked great I maximize.
I was hoping for more of a Nutella swirl look to them, but We over-mixed the batter and shed the swirl. It's ok, they still taste great, as well as the Nutella drizzle at the top completely makes up for having less swirl inside.

Banana Nutella Muffins
1/2 cup whole wheat flour
2 tsp cooking powder
1 ripe but strong banana for garnish (optional)
Preheat the oven to 375. Range a 12 cup muffin tin.
In a large bowl, blend the flours, baking powder and salt collectively.
In a separate bowl, combine the mashed banana, butter and egg jointly. Stir within the yogurt and vanilla.

Pour batter evenly into the prepared muffin tin. Best each muffin with thin pieces of banana.

1.5 cups shredded coconut
Combine sugar, sodium and coconut dairy in large saucepan and heat until steaming.
Whisk eggs in huge bowl and increase half of blend to eggs, whisking as you add.
Pour egg mixture back into skillet and cook on low until slightly thickened about 3-4 minutes.
Refrigerate until thoroughly chilled.
Process using snow cream maker; add chocolates and coconut at the end and mix until just combined. Remove from your ice cream machine and put into freezer safe container and freeze until firm.
This makes a whole lot of ice cream! I had considered cutting the recipe in two but didn't because I didn't possess anything else planned for half of a can of coconut milk and because I would be providing this to an organization.
Halve it if you must but be forewarned...you might wish you'd made it all!
I nearly wore out my first snow cream maker years ago (the freeze the container variety) and one day decided to springtime for the main one you flip the change and it freezes. I love it and never having to remember the container.

Combine flour, sodium and cayenne pepper in a bowl. Rub in butter until combination resembles breadcrumbs. Add mozzarella cheese, egg and lemon juice, mixing together with your hands to form a dough (add extra lemon juice, if needed).
Place 1/2 the dough on a well-floured surface. Roll out to form a 3mm-thick, 20cm x 40cm rectangle. Trim edges to create right. Cut crossways into 5mm strips (observe notes). Repeat with remaining dough. Place strips on ready trays.
Bake, 1 holder at the same time, for 10 to 12 minutes or until ends just begin to convert golden (see notes). Great on trays. Serve.
We used a fresh Zealand Epicure mozzarella cheese. Use any sharpened cheddar.
Use a pizza cutter dusted with flour to cut the dough into thin strips.
Straws will be pale in colour at this time, but can darken on standing up.
