I had fashioned a random hankering to create some apricot balls recently, despite my intense dislike for dried fruit! I had under no circumstances produced them before, so I did some research. The apricots are special enough so I thought, why add sugars. Because I didn't add a sweetener I needed less coconut, therefore these are quite gentle. After some refrigeration, they will firm up. Apricot Energy Balls Vegan
This Recipe is :
1 to at least one 1 1/2 mugs of soft and juicy Mediterranean" apricots
½ cup desiccated coconut
Blend the very first 2 ingredients in a food processor, until they are combined and smooth in texture.
